Sockeye salmon cured with lemon zest and fresh herbs and slicked thin.
Served with pumpernickel crostini and finished with apple-horseradish
Flash Seared Salmon Lettuce Cups
Fine diced salmon flash seared with ginger, soy and peanuts.
Served with Thai table salad, crisp vegetables and bibb lettuce
Seared Salmon Cakes
Pan seared and served over watercress salad and finished with lemon-ginger creme fraiche
Beer Battered Salmon Bites
Salmon and sweet onion rings dipped in beer batter and fried golden.
Served with spicy remoulade
Miso Glazed White King Salmon
Alaskan white king salmon marinated with miso and pan seared and served over black rice cake.
